Cheesy Peas-y Rotini

This yummy cheesy peas-y rotini is made with different cheeses and green chickpeas.

Here’s my recipe:

Ingredients:

  • 2 servings of uncooked rotini

  • 1 medium onion diced

  • 2 cloves of garlic minced

  • 1 cup of green chickpeas

  • 1 cup of stewed tomatoes

  • 1 cup of ricotta cheese

  • salt

  • 1/2 cup of grated parmesan cheese

 

Method:

  • Boil the rotini until its al dente and drain it and reserve 1 cup of cooking liquid.

  • Heat some oil in an oven safe pan and cook the onion and garlic until they’re soft.

  • Then add the green chickpeas and reserved cooking liquid and cook for 10 minutes.

  • Then add the stewed tomatoes, rotini,ricotta cheese and salt to taste and cook for 10 minutes.

  • Top it with the shredded parmesan cheese mix well.
