Potato, Rutabaga and Bell Pepper Casserole

 This potato,rutabaga and bell pepper casserole is vibrant and delicious. The rutabagas add some sweetness to the dish when they caramelize. The bell peppers add a healthy crunch.

Here’s my recipe.


  • cooking oil

  • 1 small bag of mini potatoes cut in half

  • 1/2 large rutabaga diced

  • 2 bell peppers diced

  • 1 small onion diced

  • 2 cloves of garlic minced

  • 1 tablespoon of Italian seasoning

  • 1 Thai chilli diced (optional)

  • salt



  • Heat the oven to 350°F

  • Heat some oil in an oven safe pan and add the rutabaga.Cover with a tight fitting lid and cook it for 10 minutes  and then add the onions and garlic. Once the garlic has softened you can add the Thai chilli.




  • Then add the potatoes and cook for 10 more minutes.


  • Then add the bell peppers, Italian seasoning and salt to taste and put the pan in the oven for 45 minutes.
