Sausage and Prawn Gumbo

This sausage and prawn gumbo hits the spot if you’re in the mood for some Cajun fare. It’s a mix of a whole lot of goodness. Andouille sausage, prawns and the trinity of bell peppers,celery and onions make up this dish.

Here’s the recipe.

Ingredients:

  • cooking oil

  • 1/2 LB of Andouille sausage sliced crossways

  • a handful of prawns

  • 1/2 of a large onion diced

  • 4 cloves of garlic minced

  • 2 stalks of celery diced

  • 1 bell pepper diced

  • 1 stalk of scallions

  • 1/4 cup of flour

  • 2 cups of chicken stock

  • 1 tablespoon of tomato paste

  • 1 bay leaf

  • 1 teaspoon of thyme

  • 1 teaspoon of black pepper

  • 1 teaspoon of cayenne pepper

  • 1 teaspoon of paprika

  • salt

Method:

  • Marinate the prawns with salt, black pepper and thyme and keep is aside.

  • Heat some oil in a Dutch oven and brown the sausage. Then remove the sausage and set it aside.

  • Add the bay leaf,celery, bell pepper, onions and garlic and cook them for 10minutes and then add the flour. Cook for 15 more minutes.

  • Then add the tomato paste, chicken stock, paprika, cayenne and salt to taste and cook for 40 minutes. Then add the prawns and scallions and cook for 10 more minutes.
