Vegetable Linguini

This vegetable linguini is healthy and delicious. The tomatoes are the base for the sauce. The mushrooms and zucchini add a heartiness to the dish.


  • cooking oil

  • 2 servings of linguini

  • 2 small zucchini sliced

  • 2 Roma tomatoes roughly chopped

  • 1 Lb mushrooms sliced

  • 1/2 of a large onion diced

  • 5 cloves of garlic minced

  • 1 tablespoon of Italian seasoning

  • 1 vegetable bouillon cube

  • salt



  • Cook the linguini according to instructions and save 1 cup of the cooking water.

  • Heat some oil in a pan and add the onions, garlic and Italian seasoning and cook until the onions are translucent.




  • Then add the zucchini and mushrooms and cook them for 10 minutes.



  • Then add the tomatoes, reserved cooking water, bouillon cube and salt to taste and cook for 15 more minutes.


  • Then add the linguini to the pan and mix. Cook for 5 more minutes.
