Chicken in a Hearty Tomato Sauce

Tomato sauce is truly an awesome sauce. It pretty much makes a spaghetti Bolognese . What would it be otherwise? Just plain spaghetti? With a few herbs and spices your tomato sauce can be transformed into so many different dishes. Chicken in a hearty tomato sauce is full of vibrant vegetables.

Here’s the recipe.

Ingredients:

  • 2 boneless, skinless chicken breasts

  • 2 Roma tomatoes

  • 2 bell peppers

  • 1/2 of a large onion

  • 2 stalks of celery diced

  • 4 cloves of garlic

  • 1 inch of ginger

  • 2 Thai chillies (optional–for the fire breathers!)

  • 1/4 cup of scallions

  • 1 tablespoon of Cajun seasoning

  • salt

Method:

  • Marinate the chicken breasts with 1 teaspoon of salt and Cajun seasoning at least 1 hour before cooking.

  • Puree the tomatoes, bell peppers, onions, garlic and ginger.

 

 

  • Heat some oil in a pan and add the onions and celery.

  • Once the onions have browned, add the chicken breasts and cook them until they are no longer pink.

  • Then add the puree and cook for 5 minutes and then cover it with a tight fitting lid and cook for about 15 minutes. After 15 minutes top it with the  scallions and cook for 5 more minutes.
