Easy Minestrone Soup

I bought a minestrone soup mix that looked quite healthy.There were split peas, rice and noodles in the package. It just needed some fresh vegetables to make it more vibrant.

Here’s the recipe.


  • cooking oil

  • 1 package of minestrone soup mix

  • 2 medium carrots diced

  • 2 stalks of celery diced

  • 1/2 of 1 large onion diced

  • 4 cloves of minced garlic

  • 2 small tomatoes diced

  • 2 tablespoons of Italian seasoning

  • salt

  • 4 cups of water



  • Soak the soup mix in water for 1 hour.



  • Heat some oil in a pot and cook the garlic and onions for 5 minutes. Then add the carrots and celery and cook them for 5 more minutes.



  • Add the tomato, water, Italian seasoning and salt to taste and cook for 45 minutes.
