Nuts and Raisin Rice

In this dish, some of the ingredients are cooked separately and then they’re layered. This rice is crunchy, sweet, savoury, spicy, fragrant and decadent. What more can you ask from a one pot meal?

Here’s the recipe.


  • 1 cup of basmati rice

  • 1 cup of toasted nuts

  • 1 medium onion chopped

  • 5 curry leaves

  • 4 dried chillies

  • 1 inch of minced ginger

  • 1/4 cup of raisins

  • 1 tablespoon of garam masala

  • a pinch of saffron

  • 1/2 cup of cream

  • salt

  • water



  • Heat the oven to 375°F.

  • Put the cream in a pan and bring it to a boil and then add the saffron and take the pan off the stove and set it aside. Add the raisins to the cream.


  • In an oven safe pan, toast the nuts and transfer them to another container and set them aside.



  • Heat some oil in the pan, add the onions and ginger and cook them until the onions start to brown. Then transfer them to another container and set them aside.


  • Add more oil to the pan and once it’s heated, add the garam masala and fry it for 5 minutes. Then add the rice, dried chillies,curry leaves and salt to taste and cook for 10 minutes and then cover the rice with the required amount of water for the brand and put a tight fitting lid on.


  • Once the rice is cooked, remove half the rice and ensure that the remaining rice forms an even layer on the bottom on the pan. Cover the rice with the nuts and the remaining rice. Pour the cream over the rice and bake it for 30 minutes.yy
