Moong Dal Khichdi

Khichdi is an Indian comfort food. Rice and lentils are cooked together but both remain tender without become mushy. You can use any lentil that you want. You can mix and match lentils as well. Usually, there is an equal proportion of rice and lentils. This is a mung bean or moong dal khichdi.

Here’s my recipe.

  • cooking oil

  • 1/2 cup of moong dal

  • 1/2 cup of rice

  • 1 medium onion diced

  • 1/2 cup of stewed tomatoes

  • 4 cloves of minced garlic

  • 1 inch of minced ginger

  • 3 Thai chillies sliced into rings

  • 1 tablespoon of cumin seeds

  • 1 teaspoon of turmeric

  • a pinch of asafoetida

  • salt

  • Overnight, soak the washed rice and moong dal in water with 1 teaspoon of salt in a covered container. Make sure that they are covered with a lot of of water since the rice and moong dal will expand as they absorb the water.

  • The next day, drain the water and rinse the rice and moong dal. Add some oil to a pot and once it’s hot add the cumin seeds. Then add the onions and cook them until they’re translucent.

  • Then add the turmeric, asafoetida, tomato, garlic, ginger and the rice, moong dal and salt to taste.

  • Cover it with water and cook for 1 hour. Once the rice and moong dal have absorbed all the water and they’re tender, your khichdi is ready.
