Tex-Mex Turkey Casserole

The white meat in turkey is very lean. But it can be bland and tasteless. The Tex-Mex flavours in this dish really brighten it up.

Here’s the recipe.

1 lb. ground turkey

3 small tortillas cut in half



  • 1 cup of stewed tomatoes

  • 1 cup of baby kale sliced

  • 1 medium diced onion

  • 4 cloves of minced garlic

  • 1 cup of feta cheese

  • 1/4 cup of milk

  • 2 eggs

  • 1/2 cup of chopped parsley

  • 1 bay leaf

  • 1 tablespoon of cumin seeds

  • 1 tablespoon of paprika



  • In an oven safe pan, heat some oil and add the cumin, oregano, and garlic and cook until the garlic starts to brown.




  • Then add the onions and cook them until they’re translucent and add the turkey.




  • Once the turkey starts to brown add the kale. Once the kale wilts, add the tomatoes, paprika and salt to taste and cook until most of liquid has evaporated.



  • Then transfer everything from the pan to another bowl.





  • Spray the pan with cooking spray. Use about 1/2 cup of cheese for this step. Put both halves of a sliced tortilla into the pan, put a thin layer of feta cheese, then put a layer of turkey mix, then feta cheese again and cover with another tortilla. The turkey mixture should be finished once you’ve used 3 full tortillas.



  • Beat the eggs and add the milk, cheese, parsley and salt to taste.





  • Pour the egg mixture over the tortillas and bake the tortillas in a 350 ° F oven for 30 minutes.
