Cornmeal Crusted Chicken Nuggets

Cornmeal adds a lot of texture when its used as a coating. It’s just as delicious on chicken as it is on oysters. It’s really crispy and not oily.

 

Here’s the recipe.

 

Ingredients:

  • vegetable oil

  • 2 boneless, skinless chicken breasts cut into bite sized pieces

  • 1/2 cup of cornmeal

  • 4 tablespoons of Cajun seasoning

  • salt

 

Method:

 

  • On a plate, mix the cornmeal, Cajun seasoning and salt to taste.

  • Toss the chicken in the cornmeal mixture and refrigerate it for 1 hour.

  • Heat some vegetable oil in a deep pan, and shallow fry the chicken. Once the crust is golden, your chicken is ready.
