Spicy Spinach and Mushroom Pit-za

A pita is makes a quick and easy stand-in for a pizza crust. It becomes really crunchy when its toasted but it still holds up well to the cheese and other toppings. This pit-za was topped with caramelized onions, bell peppers, spinach, morel mushrooms, chillies and a light sprinkle of mozzarella cheese.

Here’s the recipe for spicy and spinach mushroom pit-za.

Ingredients:

  • 4 pitas

  • 1 bell pepper julienned

  • 4 dried morel mushrooms rehydrated in water and thinly sliced

  • 1 cup of spinach thinly sliced

  • 1 cup of caramelized onions

  • 6 cloves of garlic sliced lengthwise

  • 1/2 cup of mozzarella cheese

  • 1 tablespoon of dried rosemary

  • 4 Thai chillies sliced in rings

Method:

  • Heat the oven to 350°F and toast the pitas for 3 minutes on each side.

 

  • Heat some oil in a pan and lightly brown the garlic along with the rosemary.

  • Then add the spinach, bell peppers, morel mushrooms and salt to taste.

  • Once the vegetables are cooked set them aside. Lightly brush the toasted pitas with olive oil. Then top the pitas with the onions, spinach, bell peppers, morel mushrooms, chillies and a light sprinkle of cheese.

  • Bake the pitas in a 350°F for 8 minutes.
