Succulent Succotash

When Daffy Duck gets riled up his go-to curse phrase is “Sufferin’ Succotash”. Well, recently I got to try some succotash and I liked it. Corn and lima beans seem to be the two ingredients that are always in succotash. Some succotash recipes call for cream or bacon or include other vegetables like zucchini. I’ve kept this recipe quite light. This succotash is far from “sufferin”. Its actually quite succulent.

Here’s my recipe.

Ingredients:

  • cooking oil

  • 1 cup of corn

  • 1 cup of lima beans

  • 2 small tomatoes roughly chopped

  • 1 onion diced

  • 4 cloves of garlic minced

  • 1 bunch of scallions sliced

  • 2 Thai chillies sliced into rings

  • salt

 

Method:

  • Heat some oil in a pan and add the garlic and let it cook for about 5 minutes and then add the onions and lightly brown them.

  • Then add the corn and lima beans and cook them for about 5 minutes. By that time they should be softer.

  • Then add the tomatoes and salt to taste and cover the pan and let it cook for 10 minutes. The tomatoes will make a light sauce as they cook and meld with the corn and lima beans.

  • Finally, add the scallions and chillies.
