Macadamia Crusted Salmon

 This macadamia crusted salmon pairs two exceptional ingredients together.Macadamias are rich in flavour and they add a lot of texture. Salmon is delicious with a few simple ingredients but it’s even with these decadent nuts as a crust.

Here’s my recipe.



  • cooking oil

  • 3 medium salmon filets with the skin on

  • 1/2 cup of macadamia nuts

  • 2 tablespoons of cornmeal

  • 1 bunch of scallions

  • 1/2 onions diced

  • 4 cloves of garlic

  • 2 tablespoons of mayonnaise

  • 1 tablespoon of black pepper

  • 1 tablespoon of smoke paprika

  • salt


  • Heat the oven to 400 °F.

  • Season the salmon skin and flesh with salt and pepper and keep it in the refrigerator for at least 1 hour.


  • Mix the mayonnaise and paprika and spread it on the salmon flesh.



  • Toast the macadamia nuts and blitz them in the food processor with the cornmeal, garlic scallions, onions and salt to taste.



  • Spread the mixture on the salmon and shallow fry the salmon in an oven safe pan for about 3 minutes and then put it in the oven for 10 minutes.
