Garlic and Dill Carrots

When carrots are cooked they become so much sweeter than when they are raw. So, depending on the flavours that you’re trying to build, you need to think about the quantity of carrots that you want to add or you could end up with quite a sweet dish. The carrots are the star of this dish and the fresh dill complements it very well.

Here’s the recipe.



  • 2 cups of carrots sliced into rounds

  • 1 medium onion chopped

  • 6 cloves of roughly chopped garlic

  • 1 teaspoon of dried chilli flakes

  • 1 cup of fresh dill

  • salt



  • Heat the oven to 350°F.

  • Heat some oil in an oven safe pan and cook the garlic for about 5 minutes. Then add the chopped onions and cook them until they’re translucent. The add the carrots, dried chillies and salt to taste and put it in oven for 20 minutes. At 20 minutes, remove the pan from the oven and add the dill and stir everything and put the pan back in the oven for another 10 minutes.




The carrots were browned on the outside but they still had a light crunch.
