Coconut Lime Rice

This exotic rice dish is flavoured with coconut and lime. It has peanuts and yellow split peas which are excellent sources of vegetarian protein and they add a nice crunch.

Here’s the recipe:

Ingredients:

  • cooking oil

  • 1 cup of Basmati rice soaked for 2 hours

  • 1/4 cup of split yellow peas soaked overnight

  • 1/4 cup of toasted, roughly chopped peanuts

  • 1/4 cup of chopped cilantro

  • 1/4 cup of lime juice

  • 1 tablespoon of turmeric

  • 1 tablespoon of black pepper

  • 4 dried chillies broken up

  • 4 curry leaves chopped up

  • 1 tablespoon of garam masala

  • 1 tablespoon of mustard seeds

  • 1 tablespoon of coriander seeds

  • salt

 

Method:

  • Heat some oil in a deep frying pan and add the mustard seeds. When the mustard seeds start to sputter, add the coriander seeds, curry leaves and dried chillies.

  • Once the curry leaves are fragrant, add the yellow split peas and stir them while they brown.

  • Then combine the lime juice, turmeric, garam masala, black pepper and some salt and add it to the pan.

 

 

  • The add the rice and cover it with 1- 1/2 cups of water and cover the pan with a lid and cook for about 15 minutes.

  • Then add the peanuts and the cilantro and cook for another 10 minutes. Once the rice is tender, your dish is ready.
