Golden Chicken Curry

For this chicken curry, the chicken is marinated for about 6 hours before cooking. The chicken is broiled so its golden and crispy. Then its cooked in a flavourful curry.

Here’s my recipe.

Ingredients:

  • 2 boneless, skinless chicken breasts diced

Marinade:

  • 2 tablespoons of lime juice

  • 2 cloves of garlic

  • 1 inch piece of ginger

  • ground cumin

  • 1 teaspoon of cayenne pepper

  • salt to taste

 

Sauce:

  • 4 cloves of garlic

  • 1 inch piece of ginger

  • 1 teaspoon of dried onions

  • 1 cup of stewed tomatoes

  • 1 tablespoon of garam masala

  • 1 teaspoon of turmeric

  • 1 teaspoon of ground cumin

  • cayenne pepper

  • salt

  • water

Method:

  • To make the marinade, make a paste with the garlic and ginger and mix it with the lime juice, cumin, cayenne pepper and salt to taste and rub it on the chicken.  Allow the chicken to marinate for at least 6 hours.

 

 

  • Put the chicken in an oven safe pot and broil it in the oven on high for 15 minutes until the chicken has browned.

Notice the caramelized juices? Scrape them up with your spoon and mix them in.
  • Push the chicken to one side of the pot. Puree the garlic and ginger and add it to the other side of the pot and let it cook for about 5 minutes. Then add the tomatoes, dried onions,cumin, turmeric, garam masala, cayenne pepper, salt to taste and 1 cup of water. Mix it really well making sure to get all the beautiful caramelized juices from the bottom of the pot. Cover the pot with a lid an allow it to simmer for 30 minutes.
