Cheesy Spinach and Mushrooms

Spinach and mushrooms go together really well. This combination is even better when it’s in a rich cheese sauce.

 

Here’s my recipe.

Ingredients:

  • 2 tablespoons of butter

  • 2 tablespoons of flour

  • 1 cup of milk

  • 1 cup of shredded cheddar cheese

  • black pepper

  • a pinch of nutmeg

  • 4 cloves of crushed garlic

  • 400 g of Cremini mushrooms

  • 1 cup of thawed frozen spinach

  • salt

Method:

  • In a pan, melt the butter and add the flour to it. Stir it well to make a roux. Slowly pour the milk while stirring. Again, while stirring, add the cheese. Season this sauce with nutmeg and black pepper. Set this aside.

 

 

  • Heat some oil in a pan and saute the garlic for 5 minutes. Then add the mushrooms. I like well caramelized mushrooms so I cook them for 15 minutes.

  • ¬†Then add the spinach and cook for another 15 minutes.

  • Once the mushrooms and spinach are cooked, add the cheese sauce and salt to taste and mix well.
