Carrot and Chickpea Pilau

I made a carrot and green chickpea pilau with a lot of aromatic spices. This could be a one pot dinner or it could be a tasty side dish.

Here’s my recipe.

Ingredients:

  • cooking oil

  • 1 cup of uncooked Basmati rice soaked

  • 1/2 cup of diced carrots

  • 1/2 cup of green chickpeas

  • 1 bay leaf

  • a few curry leaves

  • 1 teaspoon of turmeric

  • 1 teaspoon of cumin seeds

  • 1 cardamom

  • 3 cloves

  • 3 dried chillies crushed

  • water

 

Method:

  • Heat some cooking oil in a pan and add the cumin seeds. When the cumin seeds start sputtering, add the bay leaf, curry leaves, dried chillies and fry them until fragrant. This should take about 5 minutes.

  • Add the carrots and chickpeas and cover this mixture with water. Put the lid on and let it cook for about 10 minutes.

 

  • Then add the rice, turmeric, cardamom, cloves and the amount of water required to cook your brand of rice. Cook for about 20 minutes until the rice is tender.
