Masala Spiced Scotch Egg

In this dish, the humble egg, gets a sophisticated twist. I really like the seasoning in Indian kebabs. They add so much flavour to ground meat. I’ve been wanting try making a Scotch egg since I tried one at a festival last summer. So, I made a masala spiced Scotch egg.

Here’s my recipe.


  • 2 hard boiled eggs peeled



  • 1 beaten egg

  • 250 g of ground lamb

  • 2 slices of bread soaked in milk and crumbled

  • 4 cloves of garlic

  • 1 inch of ginger

  • 1 diced onion

  •  Serrano chilli

  • 1 stalk of scallions

  • 1 cup of cilantro

  • 1 tablespoon of garam masala

  • 1 teaspoon of rosemary

  • 1/2 cup of flour

  • 3/4 cup of bread crumbs

  • salt to taste



  • Using a mortar and pestle, make a rough paste with the onions, ginger, garlic, cilantro, scallions and Serrano chilli.




  • Put that rough paste in a bowl and mix with the ground lamb, egg, crumbled bread, garam masala and salt to taste.





  • Take a ball of the meat mixture and wrap it around the hard boiled egg.



  • Set out 2 plates. In one plate add the flour and season it with salt and black pepper. In the other plate, add the bread crumbs and season it with salt and rosemary. Dredge the meat covered egg in the flour, beaten egg and bread crumbs in that order.



  • Heat some oil in an oven safe frying pan and brown the battered meat on all sides. Then put the pan in a 350°F  oven for 20 minutes.
