When I bake potatoes or have French fries I like them to be golden and crispy. This time I gently flattened some steamed baby potatoes and them baked them in the oven. When they came out of the oven, they were crunchy on the outside and tender on the inside.
Here’s my recipe.
1 Lb of baby potatoes
Cajun seasoning to taste
Steam the potatoes until they are tender but firm. This takes about 15-20 minutes.
Once steamed, lightly push down on them with the back of a spoon or a potato masher, just enough to flatten them but not completely break them.
Season with the Cajun season and bake them in a 450°F oven for 10 minutes. Flip them over after 10 minutes and allow the other side to crisp up for another 10 minutes.
