Chicken in Sauce Piquante


There are so many ways to prepare chicken. In this recipe the chicken is paired with colourful vegetables and tangy seasoning in a tomato based sauce.


Here’s my recipe.




  • 1 boneless, skinless chicken breast

  • 1 cup of stewed tomatoes

  • 3 cloves of garlic roughly chopped

  • 1 diced onion

  • 1 bell pepper diced

  • 2 stalks of celery diced

  • 1 serrano chilli

  • 1 bunch of scallions

  • 1/2 cup of multigrain flour

  • 2 tablespoons of Cajun seasoning

  • 1 teaspoon of cayenne

  • 2 bay leaves

  • 1 cup of water

  • salt to taste



  • Put the flour in a plate and season it with 1 tablespoon of Cajun seasoning. Dredge the chicken in this flour.



  • Heat some cooking oil in a pot and brown the chicken on both sides. Then remove the chicken from the pot and set it aside.



  • To the pot add the garlic, bay leaves, onions, green onions, celery, bell pepper, stewed tomatoes, Serrano chilli, cayenne, 1 tablespoon of Cajun seasoning, salt to taste and water. Let this simmer for 10 minutes and then add the chicken and cover with a lid. Cook for another 20 minutes.
