Refreshing Cucumber Sandwiches


Last summer, I was fortunate enough to spend some time in Victoria, BC. We were treated to heritage buildings, glorious weather, and spectacular views of nature.



At the of end our stay in Victoria, we had afternoon tea at the Empress Hotel. We had scrumptious finger food served on a tiered tray while we took in the view of the Inner Harbour and sipped on tea. The food was simple but delicious and I hope to try to replicate some of the recipes. One of the stars of afternoon tea is the humble cucumber sandwich.






Here’s my recipe that serves 2.



  • 1/4 of an English cucumber thinly sliced across

  • 4 slices of white bread with the crusts remove

  • 4 tablespoons of unsalted butter

  • 1 clove of garlic minced

  • 1 stalk of diced scallions

  • dash of Worcestershire sauce

  • black pepper



  • Lightly salt the cucumbers and put them in a colander. Cover this with a paper towel and put something heavy like a pot on top of it. This will draw out some of the water. Leave it for about 30 minutes and then rinse the salt off and dry the cucumbers with a paper towel.




  • Mix the butter, garlic, scallions and Worcestershire sauce to form a compound butter.



  • Butter the bread on one side. Spread the cucumbers generously on 2 slices of bread. Season with salt and garnish with more scallions.




  • Slice the sandwich into strips.
