Slow Cooker Rice and Beans

This was an easy and tasty meal to prepare. I soaked the kidney beans the night before I made the dish so it didn’t take too long to cook. I put all the ingredients in a slow cooker in the late afternoon and in the early evening, my delicious dinner was ready

 

Ingredients:

  • 1 cup of dried kidney beans soaked overnight

  • 1 cup of rice

  • 1 carton of vegetable stock

  • 1 bell pepper diced

  • 2 stalks of celery  thinly sliced

  • 1 diced onion

  • 4 cloves of garlic minced

  • 1 cup of stewed tomatoes

  • 1 tablespoon of oregano

  • 1 tablespoon of cumin

  • 1 teaspoon of paprika

  • salt to taste

 

Method:

  • I put all the ingredients in my slow cooker set at high for 3 hours.
