Chicken and Pearl Couscous Stew

I’ve had pearl couscous in salads before but it can be added to any dish. Pearl couscous is a pasta and is cooked in the same way. It was an excellent filler in this chicken stew that I made.

Here is my recipe.

  • cooking oil

  • 2 boneless, skinless chicken breasts diced

  • 1 cup of pearl of pearl couscous

  • 2 diced carrots

  • 2 stalks of celery sliced

  • 1 diced onion

  • 2 bay leaves

  • 4 cloves of minced garlic

  • 1 inch of minced ginger

  • 1 teaspoon of turmeric

  • salt to taste

  • water

  • 1 cup of chopped cilantro

  • 2 tablespoons of lime juice



  • Heat some oil in a pot and add the garlic.

  • Once the garlic softens add the chicken, carrots, celery onions, bay leaves, ginger, turmeric and salt to taste.

  • Cover with water and let it simmer for 40 minutes.

  • Then add the couscous and cook for another 15 minutes.

  • Once the chicken is cooked, garnish the stew with the cilantro and add the lime juice and serve.
