Crispy Puri

Puri is an Indian flat bread that is fried. It can be torn into pieces and used to scoop up any curry but its also really good on it’s own.

Here’s my recipe:

  • 1/2 cup of white flour

  • 1/2 cup of whole wheat flour

  • a pinch of salt

  • 1/3 cup of boiling water

  • vegetable oil

  • Mix the flour and the salt.

  • To the flour, add a little bit of water at a time and mix it to form a dough.

  • This dough does not need to rest. Depending on the size of the puri, you intend to roll out, pinch of pieces of dough and form them into balls.

  • Dust a rolling board with flour and roll the balls into circles that are about 1mm thick.

  • Heat about 1 inch of oil in a pan and shallow fry both sides of the puri. They will puff up as they cook. Once they are crispy and golden on both sides, they are done.
