Curried Grean Beans

In this dish, I cooked green beans in a dry curry with very little sauce. The only liquid would have been from the beans and onions while cooking.

  • 1 lb of green beans washed and broken into bite size pieces

  • cooking oil

  • 1 sliced onion

  • 2 cloves of sliced garlic

  • 3 dried chillies broken in half

  • a handful of curry leaves

  • 1 tablespoon of cumin seeds

  • 1 teaspoon of fenugreek seeds

  • 1 teaspoon of turmeric

  • 1 tablespoon of garam masala

  • salt to taste

  • Heat some oil and a pan and add the cumin seeds. Once the cumin seeds start to sputter add the curry leaves, dried chillies, fenugreek and garlic. When the garlic softens add the onions and brown them.

  • Now, add the turmeric and garam masala and cook until fragrant and then add the green beans and stir.
