Spicy Fried Chicken

I like fried chicken. A good fried chicken should be crispy and juicy and seasoned just right. I made a spicy fried chicken that hit all three points.



  • 3 lbs of chicken breasts and drumsticks washed and and patted dry

  • 2 tablespoons of baking powder

  • black pepper

  • salt

Egg Wash:

  • 1 cup of buttermilk

  • 2 eggs

  • 2 tablespoons of hot sauce

  • 2 cups of flour

  • 2 tablespoons of cornstarch

  • garlic salt to taste

Seasoning Oil:

  • vegetable oil

  • 3 tablespoons of paprika

  •  black pepper

  • 1 tablespoon of cayenne pepper

  • 1 tablespoon of garlic salt




  • Dry brine the chicken with 1 tablespoon of salt, baking powder and black pepper to taste. Use gloves and massage the brine into the chicken.Put the chicken in the fridge overnight.

  • In flat dish, mix the flour, cornstarch and garlic salt.

  • Whisk the eggs and combine it with the buttermilk and hot sauce.

     Dredge the chicken in flour mixture, then the egg mixture and then in the flour mixture. Shake off the excess flour.

  • Heat about 1 inch of oil in a frying pan and fry the chicken until golden brown on both sides.Poke with a knife and make sure that the juice runs clear. Since the chicken was bone-in, it took about 9 minutes on each side.

  • Mix 1/2 a cup of frying oil with the paprika, black pepper and cayenne pepper and baste the hot chicken with it.
