Fennel Spiced Bread

I’ve eaten bread and buns with fennel seeds in them and I really liked the subtle licorice flavour. I looked through several recipes and tried to incorporate the best elements.It was slightly sweet and quite firm in texture. I really liked the flavours and I will work on a more cake-like fennel bread in future.

Here’s my recipe for fennel spiced bread.

Ingredients:

4 cups of whole wheat flour

1/2 cup of fennel seeds

12 tablespoons of sugar

2 tablespoons of fennel seeds

1 teaspoon of salt

3 teaspoons of dry yeast

12 tablespoons of melted butter

2 eggs

2 cups of yogurt

1 cup of water

Method:

Toast the fennel seeds until fragrant.

Beat 1 egg and mix it with the yogurt, butter and water.

In an other bowl, thoroughly mix flour, fennel seeds, sugar, salt and yeast.

Make a well and then add the egg mixture.

Mix and form into a ball.

Cover the dough with a damp towel and let it rest in a warm area for an hour

Th dough was almost doubled in size.

For a rustic loaf of bread form the dough into a 2 inch thick rectangle and brush it with a beaten egg and top it with a light sprinkling of fennel seeds.

Bake it on a pizza sheet at 350° F for 45 minutes.
