Potato Beef Croquette

I had some potatoes that I wanted to incorporate them into a dish rather than having them as a side. I used them to make a potato beef croquette.

Here’s my recipe.

Ingredients:

 

  • cooking oil

  • 2 cups of mashed potatoes

  • 1 cup of ground beef

  • 1 onion diced

  • 4 cloves of minced garlic

  • 1 inch piece of ginger minced

  • 2 tablespoons soy sauce

  • 3 eggs

  • 5 tablespoons cornstarch

  • 2 cups of Panko bread crumbs

  • salt to taste

Method:

Mix the ground beef with soy sauce, ginger and garlic at least an hour ahead.

Heat the cooking oil in a pot and cook the onions until fragrant. Then add the ground beef and brown it and add the mashed potato and mix it all up. Take a handful of the mix and shape it into a ball and then flatten it to form a patty.

In a bowl big enough to hold a patty, beat the eggs until frothy. Spread the cornstarch and Panko bread crumbs onto separate plates. Then dip the patty in the egg wash, cornstarch, egg wash and Panko bread crumbs in that order. This can get messy so keep a washcloth handy to wipe the excess mixture off your hands.

Then heat some oil in a pan and shallow fry both sides of the patties.
