Porcini and Truffle Triangoli Soup

I bought some delicious looking porcini mushroom and truffle triangoli pasta and added it to a soup.

Here’s my recipe.

Ingredients:

  • cooking oil

  • 4 medium tomatoes diced

  • 4 cloves of minced garlic

  • 1/2 a cauliflower cut into florets

  • 2 carrots diced

  • 2 tablespoons tomato paste

  • 1 cup of chopped cilantro

  • 1/2 cup of scallions

  • 2 sprigs of thyme

  • 2 cups of vegetable broth

  • salt to taste

  • 1 package of porcini mushroom and triangoli

Method:

  • Heat oil in a pot and add the onions, garlic and thyme.

  • Once the onions are translucent, add the carrots, cauliflower, tomatoes, tomato paste, green onions, salt and 1 cup of broth.

  • When the vegetable have softened, add the ravioli and cilantro.

  • Once the ravioli has cooked, your soup is ready.
