I’ve had this delicious ginger and green onion sauce served with chicken, dumplings or noodles. You can use it as a dipping sauce or it’s tasty enough to mix into some fluffy white rice.
Here is my recipe.
1/2 cup peanut oil
1/4 cup scallions sliced into 1 inch lengths
2 inch piece ginger
Put the ginger and scallions into a food processor and puree, transfer to a heat safe bowl and salt the mixture generously since it will be mixed with oil.
Heat the oil until it smokes and then pour it over the ginger and scallion mixture.
Let the mixture stand for about an hour to let the flavours meld together and then it’s ready to use
