Ginger and Scallion Sauce

I’ve had this delicious ginger and green onion sauce served with chicken, dumplings or noodles. You can use it as a dipping sauce or it’s tasty enough to mix into some fluffy white rice.

Here is my recipe.

Ingredients:

  • 1/2 cup peanut oil

  • 1/4 cup scallions sliced into 1 inch  lengths

  • 2 inch piece ginger

  • salt

Method:

Put the ginger and scallions into a food processor and puree, transfer to a heat safe bowl and salt the mixture generously since it will be mixed with oil.

  • Heat the oil until it smokes and then pour it over the ginger and scallion mixture.

  • Let the mixture stand for about an hour to let the flavours meld together and then it’s ready to use
