Creamy Potato Casserole

This creamy potato dish is the perfect comfort but it has a few more things that make it more interesting.

Here’s my recipe:

Ingredients:

  • cooking oil

  • 1 small bag of baby potatoes sliced thinly

  • 1 bell pepper sliced

  • 4 cloves of garlic minced

  • 1 small carton of half and half cream

  • pinch of nutmeg

  • a few sprigs of fresh thyme

  • 1 cup of shredded cheddar cheese

  • salt to taste

 

Method:

  • Heat the oven to 400° F

  • Heat some cooking oil in a pan and add the bell pepper and cook until they start to soften

  • Add the half and half cream, garlic, thyme and cook for about 5 minutes

  • Then add the potatoes and salt and cook for about 3 minutes with the lid on

  • Transfer to an oven safe dish and put into the oven

  • Bake for 45 minutes then remove the dish from the oven and sprinkle with cheddar cheese

  • Bake for another 15 minutes
