Inspired French Toast

Earlier in the week, I baked a banana wheat bread in my bread maker. I stored it in the freezer and saved it to use for Sunday brunch. I was inspired when I saw a French toast pocket in which a thick slice of bread was slit part way and stuffed with raspberries and honey and then battered with egg and fried. I made a peanut butter and banana French toast.

This is my recipe for inspired French toast.



  • cooking oil

  • 2 ripe bananas sliced

  • 2 eggs

  • peanut butter

  • 4 slices banana wheat bread

  • Heat some oil in a pan

  • Liquefy 1 egg and 1 banana in the food processor

  • Make a peanut butter and banana sandwich and stick tooth picks through the whole sandwich to keep it together

  • Dip the sandwich in the egg and banana mixture making sure to get a good layer of batter on both sides

  • Fry both sides in the oil until golden

There’s a lot of banana flavour in this recipe. The bananas sweeten the French toast without the addition of processed sugar.
