Coconut Lime Chicken Curry

Chicken curry can vary so much in taste depending on what part of the world that particular curry originates in and on the ingredients and their quality.

This is my recipe for coconut lime chicken curry.

  • coconut oil

  • 1 onion diced

  • 3 cloves minced garlic

  • 1 inch piece of ginger minced

  • 1 large boneless, skinless chicken breast cut into bit size pieces

  • 1 tablespoon cumin seeds

  • 1 tablespoon ground coriander

  • 1 teaspoon turmeric

  • 2 habanero peppers finely chopped

  • juice of half a lime

  • 1/2 cup coconut milk powder

  • 1 cup of water


  • Heat the coconut oil and add the cumin seeds and once they pop

  • Add the turmeric, coriander, onion, garlic and ginger and cook for 4-5 minutes

  • Then add the chicken and cook through

  • Add the coconut milk powder, water, habanero peppers, lime juice and salt to taste

  • Once the sauce thickens your dish is ready to serve.
