Cilantro Lime Rice
Rice dishes are so versatile. They can complement and enhance the flavours of the rest of the meal or they can serve as a blank canvas for big, bold flavours. Cilantro and lime are a refreshing combination.
This is my recipe for cilantro lime rice.
1 cup Basmati rice
1 1/2 cup of water
2 teaspoons of dried split yellow peas soaked at least 1 hour
1 teaspoon black mustard seeds
4 curry leaves
1 cup chopped cilantro
1 teaspoon turmeric
2 habanero peppers sliced finely
juice of half a lime
Heat the oil and add the mustard seeds, turmeric, split yellow peas and curry leaves
Once the split yellow peas have browned, add the rice, cover with water and cook for about 10 minutes
Then add the chopped cilantro, habaneros and lime juice
Cook another 10 minutes
The yellow split peas add some crunch to the rice and work well with the cilantro and lime.
