Cilantro Lime Rice

Rice dishes are so versatile. They can complement and enhance the flavours of the rest of the meal or they can serve as a blank canvas for big, bold flavours. Cilantro and lime are a refreshing combination.

This is my recipe for cilantro lime rice.

Ingredients:

  • sesame oil

  • 1 cup Basmati rice

  • 1 1/2 cup of water

  • 2 teaspoons of dried split yellow peas soaked at least 1 hour

  • 1 teaspoon black mustard seeds

  • 4 curry leaves

  • 1 cup chopped cilantro

  • 1 teaspoon turmeric

  • 2 habanero peppers sliced finely

  • juice of half a lime

Method:

  • Heat the oil and add the mustard seeds, turmeric, split yellow peas and curry leaves

  • Once the split yellow peas have browned, add the rice, cover with water and cook for about 10 minutes

  • Then add the chopped cilantro, habaneros and lime juice

  • Cook another 10 minutes

The yellow split peas add some crunch to the rice and work well with the cilantro and lime.
