Vegetable Pilau

This vegetable pilau has lots of vegetables.It can be a meal in itself or it can be a delicious side dish.

Here is my recipe.

Ingredients:

  • cooking oil

  • 1/2 onion diced

  • 1/2 cup peas and 1/2 cup green chickpeas

  • 1 carrot diced

  • 1 bell pepper diced

  • 1 teaspoon cumin

  • 3 curry leaves

  • 1 bay leaf

  • 2 black cardamom pods

  • 1 small cinnamon stick

  • 1 teaspoon turmeric

  • 4 dried chillies

  • 1 cup basmati rice

Method:

  • Heat the cooking oil

  • Add the cumin seeds, bay leaf and curry leaves

  • Once the cumin seeds start to pop

  • Add the onions and cook until translucent

  • Then add the carrots and let them soften

  • Add the peas, chickpeas and bell pepper and cover with the lid and cook for a few minutes

  • Then add the turmeric, cardamom pods, cinnamon stick and crushed dried chillies and rice and stir it all together and add enough water to cover everything

  • The pilau is done when the rice is cooked and all the water has been absorbed.

This vegetable pilau is aromatic and healthy. Enjoy!
